Need an Excuse to Improvise a Meatloaf Recipe?
So I am not a super fan of meatloaf, but I prepare it once in a while because my husband likes it. Since I do not cook it often, I do not have a favorite recipe. This provides the perfect excuse to improvise a meatloaf recipe every time. It also provides an opportunity to be flexible.
Usually, I will google a recipe to see how others prepare it.
I loosely follow the recipe as a guide, and I Improvise with the ingredients I have available.
I gravitate toward recipes that are not too complicated.
Turkey Meatloaf Recipe
INGREDIENTS
I used this recipe to get ideas for my meatloaf preparation.
The changes I made to the recipe above are as follows:
Substituted turkey for beef.
Omitted the eggs and the bread crumbs.
Added ground flaxseed and virgin olive oil. I also used homemade salsa and a splash of balsamic vinegar.
Used shallot instead of onion and added red bell pepper.
The spices I used were oregano, salt, and pepper.
Preparation
Sauté a few garlic cloves, 1/2 of a small shallot, and half of one red bell pepper in a medium sauté pan.
Remove the pan from the heat and mix the ground turkey and the rest of the ingredients.
Place the mixture in a small oven pan and cook for 25 minutes at 350 degrees F.
Serve meatloaf with dijon mustard or other mustard of your choice.
Red potatoes with fresh basil, and sliced avocado were great sides that completed the dish.
The recipe was a success. My husband liked it a lot!

My husband prepares a new batch every few days. Having it ready in the refrigerator is so convenient. It is a time saver.
